The recipe for making Creme de Mure blackberry liqueur (alcohol: 20%, sugar: 25%), which is used in making the wonderful Brumble cocktail.
Ingredients:
● 200 ml of alcohol,
● frozen blackberries (if you're fresh, you're a hero),
● sugar (whiter is better)
● Peel of half a lemon.
Preparation:
1) Pouring alcohol into a jar, pour blackberries there too, so that they dip into all the alcohol. Lemon zest is also immersed in alcohol. We put the jar for 2 weeks in a warm place, if the blackberry is fresh, this period can be shortened.
2) At the end of the two-week period, the alcohol will turn dark red. Remove dead blackberries and petrified lemon zest.
3) Cook sugar syrup at the rate of 400 ml of water per 200 g sugar. Sugar is better to take refined sugar, otherwise your syrup may not be transparent, but yellow. Carefully pay attention to the color of sugar when buying it.
4) Mix alcohol and sugar syrup, mix well with a spoon. The liqueur's transparency leaves much to be desired, so let's start filtering.
5) Put a piece of gauze in the watering can, folded several times. Liqueur should be filtered at a speed of no more than 1 drop in three seconds. After filtration, we place the liqueur in a dark place for a month and only then enjoy its excellent taste.
